Togarashi Crusted Tuna
ingredients
pickled ginger
wonton sesame crunch
pepper syrup
6 oz sushi grade tuna
1 teaspoons toasted sesame seeds
1 spring roll wrapper fried crispy, mix with sesame seeds and pinch of salt
1 teaspoon fresh minced ginger
Juice of 1 lime
1 oz rice wine vinegar
Fresh Cilantro
2 oz Togarashi
Garnish
Directions
Coat tuna with Togarashi and a little salt and pepper, then sear on all sides in hot skillet, with 1 oz canola oil, keeping it rare.
Refrigerate for at least hour.
Mix 1 cup REÀL Pepper Syrup with minced ginger, lime juice, and rice wine vinegar.
Slice tuna and arrange on plate, pour 1-2 T of syrup on plate.
Top each slice with a little pickled ginger, top with wonton sesame crunch and fresh cilantro.
