
Gourmet Pepper and Sherry Vinegar Marinated Grilled Eggplant
1 cup Gourmet Pepper Reàl
1/2 cup aged sherry vinegar
1/2 cup garlic, minced fine
1 tsp shallot, minced fine
1/2 cup extra virgin olive oil
1/3 cup vegetable oil
kosher salt and fresh pepper to taste
1 medium eggplant
1/3 cup kosher salt
1/3 cup Grana Padana Parmesan, finely grated
3 tsp fresh oregano leaves
Pan spray or oil for grilling
For the marinade/dressing: In a small bowl, whisk together the Gourmet Pepper Reàl, sherry vinegar, Extra virgin olive oil, vegetable oil, garlic, and shallot. Season to taste.
Thinly slice the eggplant into 1/8 inch slices crosswise. In a medium bowl, toss the eggplant with the 1/3 kosher salt. Allow to sit for 45 minutes. Thoroughly soak and rinse the salt off after that time several times in cold running water. Set aside.
Heat a char grill to medium heat. Brush with some oil or pan spray. Grill the eggplant slices turning twice on each side until cooked through and tender. Drop immediately into the Red Pepper/sherry marinade. Allow to sit for at least 6 hours, or overnight.
Tightly roll each eggplant slice and place 4 to 5 on a medium plate. Drizzle with some of the marinade, and garnish with fresh oregano leaves and grated grana padana parmesan.
