
Fresh Peaches lightly stewed in Blackberry Reàl with Arugula Salad and Ginger
1 cup Blackberry Reàl
3 each fresh yellow peaches
2 TBSP red wine vinegar
2 tsp fresh ginger, very fine mince
1 tsp fresh lemon juice
4 cups fresh Arugula, washed
2 tsp fresh lemon juice
2 TBSP extra virgin olive oil
kosher salt and fresh pepper to taste
Slice the fresh peaches into 1/4 inch wedges. Heat Blackberry Reàl and white wine vinegar in a small stainless sauce pan on low heat. Add the fresh ginger, simmer for one minute.
Lightly steep the fresh peaches in the blackberry mixture, turning very lightly, for about 5 minutes, until they are barely soft, but not mushy. Set aside at room temperature.
In a medium bowl, toss the washed arugula with the lemon juice and olive oil. Season lightly to taste.
Arrange the stewed peaches on 4 plates, and arrange a quarter of the arugula salad in the center of each plate.
